Viki’s journey began not in a kitchen, but in a laboratory. As a Food Technologist, she spent years understanding the molecular building blocks of what we eat. But a personal health crisis changed everything, leading her to discover the transformative power of a truly functional, plant-based diet.
She realized that most healthy options were either scientifically sound but joyless, or delicious but nutritionally incomplete. Earthy Roots became her way of bridging that gap, using her expertise to ensure every bowl has a complete amino acid profile and supports gut health.
For Viki, Earthy Roots isn’t just a business; it’s a commitment to the science of feeling good. She’s the one meticulously checking every source, every sprout, and every seed to make sure they deliver the promise of wholesome food made real.
Kodi Jayakumar, Co-Founder, Recipe & Flavor Lead
Kodi is the heart and palate of Earthy Roots. A busy mother of two, she knows exactly what it’s like to stand in a kitchen at 6 PM with zero energy and a family to feed. She refused to believe that speed had to mean sacrificing flavor or integrity.
With a natural instinct for balancing spices and textures, Kodi leads the recipe development process. She transforms Viki’s nutritional blueprints into meals that families actually want to eat. If a bowl doesn't pass the 'honest family table' test, it doesn't make it to your home.
Her mission is simple: to give parents their time back without the guilt. By focusing on deep, authentic flavors from her own heritage and travels, she ensures that Earthy Roots bowls are a highlight of the day, not just a convenience.
